So one quiet afternoon when the kids were out, I decided to whip up an apricot and cheese snack that they could eat. I bought two boxes of mini apricots from our local supermarket the other day and thought that this would be something the kids would like to try. We don’t get apricots back in our home country. Apricots have a beautiful golden color and and taste distinctively sweet. Adding a contrasting flavor like cheese which is salty will result in a gorgeous play to your taste buds!
Apricots are rich in vitamin A and C which help the body fight free radicals and viruses. Because apricots are rich in plants anti-oxidants and flavonoids, it makes this fruit highly beneficial in preventing cardiovascular disease. It also repairs the body from damage caused by free radicals. Apricots are high in beta carotene, just like carrots which protect your eyesight. Apricots are also rich in catechins, which is a type of flavonoid that has anti- inflammatory effects. One apricot alone contains 4-5 grams of catechins. Add all these benefits to the wonders that my vegan nut and probiotic cheese contains, and you will have a super snack!
Ingredients:
A handful or more of Apricots. You can substitute this with large grapes, or peaches.
cream cheese or any soft cheese you prefer
honey to drizzle on the fruit
some chopped walnuts
3-5 leaves of fresh basil
