Who will not love rainbow cakes? The fun bright colors instantly make me happy! I was so excited when my friend organized a rainbow cake tutorial with The Cake Shack for us desperate moms. We call ourselves #thebakeclub. I was so busy taking photos that the whole procedure seemed actually easy to me. Haha! My friends must think I am insane. Once our new home is done and I actually have a real kitchen, I will put my observation to test. For now, you’ll just have to enjoy my photos..
First we made the cake batter which was sifting dry ingredients, creaming wet ingredients then combining them together. We then weighed and separated the cake batter to make different colors.
After mixing the food coloring into the batter, we put each color in round pans and baked them in the oven for 12- 15 minutes. They turned out to be so vivid. I loved the outcome.
Once each layer is done comes the fun. Assembling the entire cake and coating each layer with a super yummy butter icing that had some cream cheese and lemon came next. They wouldn’t give us the exact recipe as it is their business secret, but my friends and I plan to invent our own.
What surprised me was that the overall white icing used to top the entire cake is simply made of whip cream that was processed in a mixer until it turned fluffy! Here is how it looked like before we covered the entire cake..
We had so much fun making this. We moms look forward to doing things like this together because it really is our only time to socialize after a hectic week of work and homeschooling. The kids get to play while we catch up with each others lives. After much laughing and mommy talk.. we present our finished rainbow cake..

Hello Ladies!
How are you? I’m glad you liked the rainbow cake. It is really pretty, and it taste even better. The cake shack did not want to disclose the recipe for the icing that goes in between layer though. So please just google your own and try. It was butter and cream cheese based and had lemon. Some suggestions from my friends include:
lemon butter cream cheese frosting
lemon cream cheese butter cream
lemon cream cheese swiss meringue butter frosting
Here is the recipe:
Ingredients:
2 sticks butter, room temperature
2 1/3 cups sugar
5 egg whites, room temperature
2 teaspoons vanilla
3 cups flour
4 teaspoons baking powder
1/2 teaspoons of salt
11/2 cup milk
rainbow gel food coloring
Procedure:
Preheat oven to 350 degrees F.
Sift together dry ingredients: flour, salt, baking powder. Set aside.
WEIGH your mixing bowl for your electric mixer when empty.
Cream the butter, and sugar in an electric mixer until light and fluffy.
Add the egg whites ONE AT A TIME.
Add the vanilla.
Alternating between the wet and dry..add the milk and the flour into the mixture.
Weigh the mixing bowl with the batter, then divide the weight by 6.
Divide the batter into 6 bowls (use the weight you came up with if you wnat to be very accurate)
Color each batter with RED, ORANGE, YELLOW, GREEN,BLUE, VIOLET.
Bake the pans in an oven for 12-15 minutes.
Once done, set aside to cool while you do your LEMON CREAM CHEESE Frosting.
Assembly:
Place the bottom layer (Violet) on a cake stand that swivels.
Layer with frosting, then place your next cake color until you end with RED.
Cake final frosting is made by whipping one carton of VALUE PRIDE WHIPPED cream (made for our climate) in a high speed mixer. Stop once you see that it is shinny. Over whipping is not good.
Frost your entire cake with this whipped cream.
