If you want to eat healthier and give your body the right kind of food, then you should do your best to have a colorful plate filled with different kinds of vegetables. There are numerous benefits from eating certain colors of fruits and veggies and because I don’t want to bore you with too much to read, here is a good infographic from natural healthy concepts.
Once I got a hold of purple corn and a couple of veggies from HomeGrown Organics, we set off to make a yummy healthy salsa. Making a delicious raw salad is the easiest way to get all the colorful fruits and veggies into your system aside from juicing. I love that HomeGrown Organics delivers!
Ingredients:
3 purple corn boiled and removed from husk.
1 medium red onion, iced
1/2 cup cherry tomatoes, cut in half
1 medium red bell peppr, diced
1/2 cup of garbanzos
a handful of corriander, chopped
Mix all ingredients in a bowl. You can add more of your preferred ingredient. This salsa can be served as a salad or as a side dish to go with taco or healthy food wraps. To make this a fun and personalized salad to serve at parties, serve each ingredient separately and have guests take however much they want. You can add spices like salt, pepper, lemon and olive oil to taste or pair it with a fancy Asian dressing like a sesame flavored one. Enjoy and go get your rainbow food!
